Chocolate Avocado Pudding 

Prep time : 15 mins Serves 4

  • 4 Ripe avalados
  • 1 Cup coconut cream
  • 2/3 Cup cocoa powder
  • 1/2 Cup maple syrup or if doing low carb swerve to taste
  • 1 Tablespoon lucuma powder
  • 1 Tablespoon maca powder
  • 1 Tablespoon vanilla extract    
  • 1 Tea himalayan salt 

Add all ingredients into a food processor and blend. Scrape the sides when needed. Chill the pudding for 30 minutes then put into serving cups and garnish with fresh mint. 

  • lucuma is a super nutritious Peruvian fruit that contains beta carotene, iron, zinc, vitamin B3, calcium, and protein. Its maple-like taste makes it a sweet addition to any recipe. 
  • Maca is a pleasant tasting root usually available in powder form. It is very rich in nutrients (has a higher calcium level than milk) and is very nutrient dense. It also has over 20 amino acids, including 8 essential amino acids.
